Causeway Bay’s Amalgamate: Beyond West, Beyond East in one boundary-free tasting Amalgamate is Causeway Bay’s new social hub—less “either/or,” more “why not both?” Led by Chef Kasey Chan, the menu reframes seasonal ingredients through a “Fusion & Extension” mindset, where East and West don’t just collide; they blend into something quietly confident. The story starts with “Let’s Begin,” a set of inventive starters built on contrast: foie gras lifted by Chinese lou sui and bright chilli jelly, King Crab “Cheong Fun” topped with dan dan meat sauce, and Hokkaido scallop ceviche finished with caviar. It’s flavour-forward, but never chaotic.
Then comes the heart of the experience: small plates designed for sharing, whether you’re doing a “Dim Sum, Reimagined” moment or diving into “For the Sharing Table” where bigger plates turn the table into the main stage. Expect modern Western technique with classic Chinese instincts—plus a dessert chapter that keeps things playful.
