DAIGO 醍醐 — A Japanese temple-quiet omakase in Central, now reborn with shojin ryori calm. DAIGO 醍醐 is Mori-san’s new Central address—FOCO—and it feels intentionally split for different moods. One side is the legend’s craft: Edo-style nigiri with his signature hospitality. The other is Chef Lung’s team-led experience, where the flavours lean bold and precise.
For this visit, I went straight for 龍師傅’s side—and the “wow” starts early: standout fish, clean technique, and that temple-quiet pacing that makes every bite feel like a moment, not just a course.
What makes this spot different is the way it blends dining with atmosphere. Daigo’s connection to shojin ryori—the Buddhist/temple vegetarian tradition—adds a gentle, grounding counterpoint to the omakase rhythm. Think: vegetables with real depth, sukiya-like calm, and a service style that doesn’t rush you.
