Uncle Fong Chongqing Hotpot: The Nine-Grid Hotpot Everyone Is Talking About Formerly known as Xiao Yu Hotpot, Uncle Fong Chongqing Hotpot has become one of the most talked-about hotpot brands in Hong Kong, now with multiple locations across the city. The newest Central branch features a modern Bauhaus-inspired interior with warm lighting and a relaxed atmosphere, offering a contemporary setting while staying true to traditional Chongqing hotpot culture. The signature Jiugongge hotpot, divided into nine grids, is the highlight, designed to cook different ingredients at different heat levels for the perfect texture and flavour.
The soup base is the heart of the experience, made from premium ingredients including Chongqing chillies, Sichuan peppercorns, beef tallow, Pixian bean paste, and Yunnan ginger, creating a rich, numbing, and deeply aromatic broth. In addition to classic meats and seafood, the menu also features unique ingredients such as homemade ebiko prawn paste, Putien soft tofu, Wulong potato noodles, US prime beef short rib, and coral mussels. For those who prefer milder flavours, options like pork bone broth, tomato broth, and mushroom broth ensure there is something for everyone.
