Ramenya Shima | Mar 2026 | Tokyo Top 3 Debuts in HK
Tokyo’s cult ramen institution Ramenya Shima makes its first overseas debut in Hong Kong this March 2026, opening at Sugar+ in Causeway Bay.
Consistently ranked among Tokyo’s Top 3 ramen restaurants on Tabelog, the Shibuya flagship prepares just 60 bowls daily — a philosophy of restraint and craftsmanship that continues in Hong Kong with limited servings each day.
Founded by Chef Hiroshi Morishima, the restaurant is celebrated for its refined tanrei-style broths. Guests can choose from three signature bases:
🍜 Shoyu – layered soy depth
🤍 White Shoyu – elevated with white truffle oil
✨ Shio – delicate and crystal-clear
Each broth is simmered with nearly 30 premium ingredients, including Japanese chicken and aged bonito, as well as scallops and sea bream. The noodles — crafted from a five-flour blend led by Hokkaido’s Kitahonami wheat — are supple, elastic and perfectly al dente.
