Um Yong Baek: Busan’s Famous Pork Rice Soup Arrives in Hong Kong Busan’s cult-favourite pork rice soup specialist, Um Yong Baek, has officially arrived in Hong Kong, bringing its iconic dwaeji gukbap to Central. This humble yet deeply comforting Korean dish is all about the broth, and here diners can choose between a clear, light pork soup or a rich, milky broth simmered for hours with pork bones and trotters. In true Busan style, the soup is served unseasoned, allowing diners to customise the flavour with salt, shrimp paste, chives, and garlic to suit their own taste.
Beyond the signature pork rice soup, the restaurant also offers hearty side dishes such as ogyeopsal suyuk — thinly sliced boiled pork belly served with tofu and chives — as well as boiled pork maw and steamed salted pollack roe, which adds an extra layer of umami to the soup.
