Perched above the former runway of Kai Tak, Jin Bo Law unveils A Timeless Hong Kong Tale — a nostalgic new cocktail collection crafted by Beverage Manager Damon Fung.

Inspired by the golden era of Kai Tak Airport, when aircraft skimmed rooftops and neon lights shimmered over Kowloon’s streets, the menu captures the city’s memory in liquid form. Each cocktail reinterprets a familiar Hong Kong flavour through contemporary mixology, weaving in local ingredients like baijiu, magnolia, osmanthus and Shaoxing wine.

🍍 Pineapple Bun with Butter transforms a cha chaan teng classic into a silky blend of butter-washed rum and lychee baijiu.
✈️ Kai Tak Airport offers a bittersweet aviation tribute with bourbon, yuzu baijiu and its signature “Airplane Olive.”
🌊 Bei Fung Tong reimagines typhoon shelter flavours in a bold, mezcal-led creation.
🥃 Street’s Fashion delivers an umami-driven twist on the Old Fashioned, layered with sesame oil and mushroom.
