Housed within the Grade I–listed Pedder Building, Pedder Chinese arrives in Central with a quiet confidence that feels entirely fitting for its historic surroundings. Dating back to 1924, the neoclassical arches and stonework set the tone for a dining experience rooted in memory yet refined for the present.
At the helm is Chef Chan Sze-hoi, a seasoned Cantonese chef with over two decades of experience. His philosophy is clear: respect tradition without being constrained by it. Rather than dramatic reinvention, his cooking focuses on precision, restraint, and subtle evolution. Classic Cantonese dishes are given a thoughtful polish, allowing technique and ingredients to speak first.
The menu is broad, spanning celebratory seafood to comforting stir-fries. Standout dishes include the clay pot stir-fried crab with green peppers, where sweet, meaty crab is sealed by high heat and lifted by gentle spice, and the chive-stirred halibut, crisp at the edges yet snow-white within. Cold dishes, such as the soft-boiled drunken mantis shrimp, showcase equal finesse, balancing aroma, texture, and visual elegance.
