Julien Royer, of Singapore’s Odette (Asia’s 50 Best Restaurants), present Louise a casual French fine dining restaurant. (Space previously occupied by Aberdeen Street Social) The restaurant has the elegance of a French madame with cosy grey banquettes, tropical touches and white, cream, dining floor. Louise is intended to evoke the joy of family meals chef Julien Royer enjoyed growing up in France. Casual dishes, such as pâté en croûte and beef tartare with fries, are served in the Parlour. There’s also a cheese and charcuterie bar, a wine bar, and a selection of pastries. Dining Room offer more extensive menu with dishes like angel hair pasta with Kristal caviar, black truffle, and kombu, heirloom tomato tart with burrata and basil sorbet, and even more locally inspired bites such as the Hong Kong frog legs with parsley and garlic crisps Signature dish – roast yellow chicken, with crispy skin and tender meat. – Pan seared French veal sweetbread, lemon confit, brown butter lettuce cream, potato gnocchi – Angel hair pasta, Kristal caviar, black truffle, kombu – Wagyu beef cheek braised in red wine, confit carrots, pearl onions
