This contemporary Hong Kong restaurant offers a curated menu of creative sharing plates, run by Camille Glass and George Kwok. The intimate bar features a modest natural wine menu, mostly served by the glass, making it a relaxed spot to discover new wines without feeling overwhelmed by a vast list of labels. The wine selections, written on the wall, change regularly. Translated from French, BRUT means “raw,” reflecting raw talent, passion, and personality. The restaurant believes in food with an authentic story, seamlessly blending diverse influences and backgrounds. The playful menu and wine list are constantly evolving, with wines sourced from mostly organic and biodynamic farmers worldwide. Brut echoes the unpretentious yet highly accomplished wine bars found in cities like London, New York, and Melbourne. Chef Gavin Chin leads the kitchen with inventive dishes that mix influences and ingredients from various cuisines, such as local greens with Lao Gan Ma, halloumi, and jalapeño. The unique wine list curated by Yulia Ezhikova offers plenty of opportunities to explore outside your comfort zone.
