Listed in every Saigon travel guide, Nguyễn Thi Thành, better known as The Lunch Lady, serves one dish a day, a rotation of local Vietnamese noodle soups made fresh daily from scratch. Cô Thành brings her recipes out of the heart of District 1 Ho Chi Minh. Casual Vietnamese restaurant, First it was Banh Mi Kitchen in Central and Le Petit Saigon in Wan Chai, and now Co Thanh has opened its doors in Central. Shipped directly from Vietnam, over 70% of ingredients are hand picked by the Cô Thành team. The signature dish: The bun mam, a bowl of noodle soup, it featured stock made with two types of preserved fish, three kinds of preserved shrimp, garlic, shallots, lemongrass, chilli and chives. Traditional street food, the banh mi thit, a delicious home-made baguette full of ingredients, such as house-made pâté, five kinds of cold cuts, cucumbers, shaved carrots, chives, coriander and Vietnamese chillies for a spicy kick.
