Revered at home and featured in Japan’s Michelin Guide editions of 2022 and 2023, this restaurant is renowned for its focused menu celebrating the rich flavors and delicate textures of Wagyu beef. Helmed by chef Ishibashi Hitoshi, trained extensively under co-founder Shinji Masuda, Nikutoieba Matsuda offers an intimate 14-course omakase journey, where Wagyu reigns supreme. Unlike many, the menu deliberately excludes fish and vegetable courses, allowing the beef’s quality and diversity to take center stage. While the menu rotates monthly to showcase seasonal Wagyu cuts, two signature dishes remain steadfast: the Wagyu beef tartare sushi and the Wagyu fillet cutlet sandwich. The latter features a tender chateaubriand paired with a homemade tartare sauce infused with Narazuke pickles, a nod to the restaurant’s hometown heritage in Nara. This first international outpost perfectly mirrors the acclaimed experiences found in its Nara and Osaka locations, famed for being some of Kansai’s most coveted dining destinations.
