Quinary’s Antonio Lai and his former colleague Samuel Kwok have opened a new bar on Hollywood Road, blending their contrasting yet complementary cocktail styles. Antonio, a pioneer of molecular mixology in Hong Kong, uses modern equipment for theatrical drinks, while Samuel focuses on classic mixology techniques. They recreate classic cocktails like Pimm’s Cup, Pisco Sour, Garibaldi, and Boulevardier in unique ways, and offer innovative drinks like Scoop Me Up with guava white tea foam and pineapple smoke, Son of Pimm’s with strawberry and shiso, and Green Goblin with dill-infused Bianco Vermouth. The bar also serves local-inspired bar bites like Sichuan sour fish fingers with pickled cabbage dip and cheeseburger gyozas with Bloody Mary tomato chutney.
