Shiro Central: A Contemporary Taste of Tokyo at Tai Kwun Fans of Shiro’s inventive sushi have reason to celebrate. The beloved Pacific Place restaurant has expanded with Shiro Central, a striking new outpost set within Tai Kwun’s historic Armoury building overlooking the Parade Ground. Helmed by executive chef Tatsuya Iwahashi and executive sushi chef Jeff Ko, the restaurant blends contemporary Japanese dining with architectural heritage.
Shiro Central carries forward the brand’s signature crystal sushi — delicate layers of flavoured jelly over pristine fish and rice — with standout combinations such as fatty salmon with mint and sake jelly, botan ebi with ponzu jelly, and scallop with caviar and kimchi jelly. Chef Iwahashi’s saikyo-style grilled black cod remains a highlight, alongside new additions including bluefin tuna plates, wagyu horaku-yaki, shime saba with yuzu konbu, and refined noodle and robata selections.
Compared to its Admiralty sibling, Shiro Central feels more intimate and elevated. Guests can dine at the sushi counter, on the terrace, or in a semi-private room for eight. Begin with a hojicha highball at Shiro Bar before settling in for an elegant yet vibrant journey inspired by Tokyo’s Ginza, Shinjuku and Shibuya districts — all set within one of Hong Kong’s most storied landmarks.
