Hotal Colombo is inspired by the casual Sri Lankan eateries that spill onto the streets all over Colombo. Head chef Gisela Alesbrook, a Sri Lankan native, takes the helm of the kitchen of this 40-seat restaurant Hotal Colombo is all about sharing a few plates over drinks. With an abundance of coconuts, fresh herbs and local chillies. The menu offer a variety of “short eats” such as bone marrow varuval with pol roti and beef chilli fry, hoppers (Typical Sri Lankan cuisine is Hoppers, a crispy bowl-shaped pancakes served with gravy or marinated vegetables), a selection of kari (curry). When it comes to curries at Hotal Columbo, the selection of “Karis” includes chicken, lamb, black pork, fish and seven veggies Signature dish: Bone Marrow Varuval, with Pol Roti Masala Dosa, with Sambhar, Coconut Chutney Fish kari
