Fiata has become one of Hong Kong’s most celebrated pizzerias, and a single bite explains why. Founded by Salvatore Fiata—now crowned the 3rd best pizzeria in Asia-Pacific—this Soho favourite is devoted entirely to the craft of authentic Neapolitan pizza. At Fiata, there are no distractions: no pasta, no salads, no reinterpretations. Just pizza, prepared with uncompromising respect for tradition.
Every ingredient, from San Marzano tomatoes to DOP Parmigiano and heritage wheat, is sourced directly from Italy. The dough follows strict Neapolitan rules, and Salvatore even filters Hong Kong water to get as close as possible to the taste of home. The result is a pizza that feels transported straight from Naples: tender, blistered, aromatic, and impossibly flavourful.
Yet Fiata’s success was far from guaranteed. When Salvatore opened his doors in 2021, Neapolitan pizza was unfamiliar to most Hong Kong diners accustomed to American-style slices. But he stayed true to his roots—refusing to alter recipes, chase trends, or customise beyond what tradition allows.
