It’s all about tradition here. Firstly, the room, which is set over two levels, cleverly evokes the spirit of a 1920s Shanghainese dining room thanks to its rugs, teak floors and stained glass windows. Secondly, dishes on the Cantonese menu are prepared in a classic way – don’t expect any modern interpretation here. Lunch features dim sum favourites such as baked barbecued pork puff, but the Sicilian red prawn and minced pork dumpling—a xiao long bao with a briny Mediterranean twist The Tea Bar, which boasts an extensive collection of antique teapots, offers over 30 varieties of tea. Given that Spring Moon has plenty of regulars who order without even consulting the menu, they could easily rest on their laurels. But Trento is keen to go forward: “We leave the [creation of] new dishes to the chef, and develop and test as a team.” These creations first appear in special tea-pairing menus, as well as at the exclusive chef’s table dinners held in the dim sum kitchen.
